Best breads?
Ok im starting up a healthy deli/coffee shop with sandwichs/soups/pasta salads/etc. to eat in or take away at lunch times. However for the sandwichs I'm going to be having a mini bakery to bake our own breads - however I want to know from you guys - what kind of breads will bring customers to my shop (eg. just nice normal homemade bread? special breads like pesto bread? freshly baked panini breads? maybe even different types of wraps? etc, etc.) Also im going to be baking some healthy cakes/ sweet breads so any suggestions of your favourites? even better if they are diabetic or anything like that! THANKS EVERYONE!

- It might be a good idea to approach an employee of a local bakery or someplace like a Panera or Atlanta Bread Company to find out what their most popular breads are. Also, if you match the breads well with a good sandwich, the sandwich will sell the bread. I recently had a mediteranean veggie sandwich at Panera with Tomato Basil bread, and the sandwich was good, but it really sold me on the bread, so just be sure to choose sandwiches that highlight the kind of bread you choose.
- This is my favorite bread..I also used to like some breads Lazarus dept store made...lemon carrot bread and spinach orange bread and zucchini bread. If you have breads without trans fats or low fat (that still taste rich) that would be good. Banana Nut Bread Mix together thoroughly 2/3 cup sugar 1/3 cup soft shortening 2 eggs (or Ener G egg replacer) [or Flax seed-To use as an egg substitute grind 2 tablespoons flaxseed and add 6 tablespoons boiling water, let set for 15 minutes then whisk with a fork-- this mixture will replace 2 eggs in a recipe] Mix together and stir in 3 TBSP sour milk (or sour soy milk) (see recipe below) 1 cup mashed bananas (3 bananas =1 cup approx.)(Beat bananas to assure consistency) Sift together and stir in 2 cups sifted flour (or 1 ½ cups flour with ½ cup ground almond flour) 1 tsp. baking powder ½ tsp. baking soda ½ tsp. salt Blend in ½ cup chopped walnuts Pour into greased and floured 9” X 5” X 3” loaf pan. Let stand 20 minutes before baking. Bake at 350 degrees for 50 to 60 minutes or until it tests done (fork in center comes out clean). Note- 1 cup grated apple (unpared) can be substituted for bananas to make Apple Nut Bread. (Or 1 cup of semi-sweet or milk chocolate morsels can be added for chocolate chip banana bread). Sour Milk Use ½ TBSP (1 ½ tsp.) apple cider vinegar to ½ cup milk or soy milk. Let stand a few minutes. (For single recipe) Add 1 TBSP apple cider vinegar or lemon juice to 1 cup milk or soy milk. Let stand a few minutes. (Doubled recipe only)
- sounds great where will it be?? panini is very popular plus some people like wholemeal and granery. wraps are also a new idea thats really caught on. i'm a diabetic and you can bake with splenda instead of sugar but cut down on the amounts they say on the jar. cakes with more fruit and less sugar are very good like apple cake or banana bread. i'd love to visit when you open. let me know when and where..
- Well, you mentioned a healthy deli. I would go with wraps and full grain breads, wheat breads. Nothing white. And you may want to offer a sour dough rye or something along those lines, in case someone has the hankering for something to sink your teeth into.
