What do you like most about italian breads such as ciabatta, focaccia and panini?

1. That I can make them easily myself and experiment with the flavourings.
2. The ones we get here in Australia, are so light, yet filling, and most are stamped 98% fat free. That way I don't feel so guilty with the wonderfull toppings or fillings I can use.
