Vegetarian Panini recipes?
My mom just bought our family a panini press, and now she INSISTS that all our meals come from the panini press. Only problem is, I'm a vegetarian, and all our panini recipes are meat-related. Help? I'm exaggerating a bit, but she wants it to be worth her money to buy a machine that makes exactly ONE food item,

- My daughter and I make veggie panini all of the time. Try some mixed peppers (green, red, yellow) with onions, ranch dressing, cheese. Or try portabello mushrooms with red curry sauce. Beans, rice, and salsa. Tomato, mozzerella, and basil. Eggplant with feta cheese. The possibilities are endless.

- mozzarella and roasted veg (aubergine,cougettes,peppers)-u can buy these in tins in suermarkets if u dont wanna roast them yourself. u can add hoummos instead of cheese if you like. fake chicken and sweet chilli marmite/ vegemite and cheddar cheese goats cheese and sundried tomatoes veggie bacon, brie and tomato
- This great pizza place near me makes the best vegetable panini. I make it at home and it's so good. Slices of carrots cut on the diagonal to make them as big as possible without being very thick slices of summer squash and zuchinni thick slices of onion Eggplant slices whatever other kind of veggie you like but it's so incredible with the first three--you must include them! :) Put them all in a large bowl and mix olive oil, salt pepper, oregano and basil over them. Grill all the veggies until tender. Put them on your bread, add another dose of oil and spices, add some fresh mozarella cheese(good without too!) Put in press. Now, drizzle a good balsamic vinegar over each bite of your sandwich or open it up and drizzle it or dip it. It's so good! Messy as heck but worth every spill.
