Best Panini Maker

fun dinner sandwiches?

My husband and I were talking about something different to make for dinner and I thought of having a big homemade "gourmet" sandwich. I'm just not really sure what to make. Some of the negatives is we don't have a panini maker (we'll be making it the "old fashioned" way on the stove), we don't eat deli meat (I'll gladly roast up some chicken though), and I don't eat beef or pork. I was thinking of something along the lines with salsa, some form of smoked cheese some form of meat and some veggies? I dunno, I'll take any suggestions, even if it involves deli meat, beef or w/e because I can just substitute.

How about an Alaska Crab Wrap Sandwich? 1 pound Alaska crab meat out of shell (King, Snow or Dungeness crab) -- thawed 4 flour tortillas (12" to 14" size), heated 4 ounces Brie cheese -- ripe, diced 4 cups mixed baby lettuces 1 cup diced tomato 4 slices bacon -- cooked 1/2 cup mayonnaise 1 1/2 teaspoon chopped fresh dill Mix the dill and mayonnaise together in a bowl. Place Alaska crab meat and brie in a saute pan; warm over medium heat until crab is warm and cheese starts to melt. Lay out the warm tortillas and spread 1 ounce of the dill mayonnaise mixture over each. Top with 1/4 of the crab and brie mixture, 1 cup of the mixed lettuces, 1/4 cup diced tomato and 1 slice of bacon, lightly chopped. Fold in the ends and roll up like a cigar. Cut in 1/2 on the bias and serve. Or, an Oyster Sandwich? Butter 6 Shallots, chopped finely 1 Stalk celery, chopped finely 1 Handful celery tops, chopped finely 1 teaspoon oyster sauce 36 Freshly opened oysters (with their liquor) or bottled oysters 1 lemon, juice of Sweet chili sauce to taste Salt and freshly ground pepper 8 slices Cornbread toasted Chopped celery (stalks and tops) Chopped shallots Heat some butter in a frying pan until foaming. Add the shallots and celery and saute for a few moments (the greens should remain crunchy). Sprinkle with the oyster sauce, liquor from the oysters, lemon juice, chili sauce, salt and pepper, and cook, stirring until the mixture is almost boiling. Reduce the heat, add the oysters and cook for about 30 seconds or until the oysters are just warmed through. Pile the oysters onto slices of cornbread and top with another piece of bread to form a sandwich. Scatter over some chopped celery tops and shallots and serve at once. Or, for a vegarian sandwich, goat cheese, Portabello mushrooms, with arugula, red onion, roasted red peppers, mayonnaise, balsamic vinegar, salt and pepper, all on a focaccia roll.
  3. How about grilled veggies and goat cheese or Avocado, girlled veggies and brie (was my fav. before I went vegan) You could add chicken to both of these. EDIT TO ADD: I would just butter and garlic both sids of the bun and throw it under the broiler !
  4. Nice crusty bread sliced and put in sliced cheeses, cucumber slices, tomatoes and lettuce and add different condiments like gourmet mustard or mayo. Or an adult version of a grilled cheese using interesting tasting cheeses and different types of bread.
  5. Shredded roast chicken with a scoop of dressing and some cranberry sauce. You can put cheese on it also, and toast that puppy on a hot skillet after you put a bit of butter on the bread.

  8. DINNER ROLL SANDWICHES 2 pans of small rolls Thin sliced boiled ham Thin sliced cheese (1 or 2 kinds) 1 stick butter 1 tsp. Worcestershire sauce 1 1/2 tbsp. onion bits 1 tsp. poppy seeds (optional) 1 1/2 tbsp. mustard Split rolls lengthwise and put ham and cheese in. Melt butter, add other ingredients and pour over rolls; cover with foil. Bake at 350 degrees for 20 minutes. Serve warm. =]
  9. Have you thought of making your own honey-roast ham? It's fantastic, and very easy. Or I use Nigella's recipe for coke ham: Nigella’s Coca Cola Ham 2kg mild-cure gammon 1 onion, peeled and cut in half 2-litre bottle of Coca-Cola FOR THE GLAZE handful of cloves 1 heaped tablespoon black treacle 2 teaspoons English mustard powder 2 tablespoons demerara sugar Mild-cure gammon doesn't need soaking, but if dealing with a salty piece, put it in a pan covered with cold water, bring to the boil, drain and start from here; otherwise, put the gammon in a pan, skin-side down if it fits like that, add the onion, then pour over the Coke. Bring to the boil, reduce to a good simmer, put the lid on, though not tightly, and cook for just under 2 and a half hours. If your joint is larger or smaller, work out timing by reckoning on an hour per kilo, remembering that it's going to get a quick blast in the oven later. Take into account that if the gammon's been in the fridge right up to the moment you cook it, you will have to give it a good 15 minutes or so extra so that the interior is properly cooked. Meanwhile, preheat the oven to 240ºC/gas mark 9. When the ham's had its time take it out of the pan (but do NOT throw away the cooking liquid) and let cool a little for ease of handling. (You can let it cool completely then finish off the cooking at some later stage if you want). Then remove the skin, leaving a thin layer of fat. Score the fat with a sharp knife to make fairly large diamond shapes, and stud each diamond with a clove. Then carefully spread the treacle over the bark-budded skin, taking care not to dislodge the cloves. Gently pat the mustard and sugar onto the sticky fat. Cook in a foil-lined roasting tin for approximately 10 minutes or until the glaze is burnished and bubbly. Should you want to do the braising stage in advance and then let the ham cool, clove and glaze it and give it 30-40 minutes, from room temperature, at 180ºC/gas mark 4, turning up the heat towards the end if you think it needs it. Baked Gammon 3.5 lb (1.6kg) middle gammon joint 2 medium onions, quartered 2 medium carrots, thickly sliced 1 bay leaf 5 black peppercorns cloves to garnish demerara (brown) sugar to glaze Weigh the gammon and calculate the cooking time, allow 20 minute per 1 lb (440gm) plus 20 minutes. Place gammon in a large pan and cover with cold water. Bring to a boil, then drain. Return gammon to saucepan. add the vegetables, bay leaf and peppercorns, cover with cold water and bring slowly to a boil. Skim the surface with a slotted spoon. Cover and boil for half the calculated cooking time. Drain and wrap the gammon in foil. Place in a roasting tin and bake at 175ºC up to 30 minutes before the cooking time is completed. Remove the foil and rind from the gammon, Score the fat in diamonds and stud with cloves. Sprinkle the surface with demerara (brown) sugar and pat in. Bake at 220ºC for 30 minutes, until crisp and golden. Serve hot or cold. It's pretty good hot, but even better the next day (or the same night, I guess) on sandwiches. I did sandwich night the other night at my house, I went and bought fresh Italian Bread, I got roast beef, turkey , ham, soft mozzarella, white American , Cheddar, Spanish onions, avocado, Tomatoes lettuce.. Mayo , and Mustard. I did mine pretty simple but you can add endless items on it. Black Olives Sprouts, Cucumbers, peppers. etc.
  12. One of my favorite sandwiches my mom makes sometimes is this: Take thinly sliced chicken breast and cover both sides with paprika, rub it in. Either grill the chicken or fry on stove until done. We then put the chicken on a whole wheat roll, put on sliced provolone cheese and then roasted red peppers. That's it. It's very easy and it tastes very, very yummy! Have fun with it though and try anything!
