Best panini sandwich combos?

I just got a press and want to know the best meats, vegetables, cheeses and sauces to go on paninis together! Also what sauce is good with a turkey havarti?

1. My favorite panini is prosciutto and fresh mozzarella with arugula with mayonnaise and Dijon
2. Grilled Chicken and Roasted Red Pepper Panini...or...Grilled Chicken Sandwich with Apricot Sauce... You could try this sauce........Combine equal parts apricot preserves, Dijon mustard, and mayonnaise. Add cayenne to taste. Refrigerate until needed.
3. Chicken breast, mozzarella cheese, sliced tomatoes, and spinach or basil leaves.
4. Grilled vegetables like portobello mushroom, eggplant, peppers, onion and tomato with a parmesan/garlic dressing, pesto or marinara. Swiss, havarti and meunster with tomato and a brown honey mustard. Beef, swiss, grilled onion and roasted garlic with horseradish.
